The Natural Macrobiotic Approach
Taught by Edward Esko, Alex Jack, Amber Maisano, and Sachi Kato
This residential workshop held in the beautiful Berkshires of western Massachusetts will introduce you to the holistic macrobiotic approach to this disorder, which affects 2% of the population. Lectures and discussions will present the macrobiotic view of the cause of psoriasis, with emphasis on dietary and lifestyle factors such as overconsumption of meat, dairy, and other animal products. A plant-based macrobiotic diet centered on whole grains, vegetables, beans, sea vegetables, local fruits, and other vegetable quality foods will be presented as the foundation for the control and recovery from this condition.

Participants will have the opportunity to enjoy vegan macrobiotic meals with gluten free options prepared by world-class chefs. Hands on cooking classes will instruct you in the preparation of balanced plant based meals. Special home remedy classes will guide you in the preparation of special dishes, teas, and applications designed to aid in recovery.
Morning exercise sessions and classes on Shiatsu and Energy Balancing will help reduce stress and enhance healing. You will also have the opportunity to meet and network with individuals who have successfully applied the macrobiotic diet and way of life in the management and recovery from psoriasis.

Alex is the executive director of the Kushi Institute and a senior macrobiotic teacher and counselor. He has also served as editor-in-chief of East West Journal, director of the One Peaceful World Society, and president of Amberwaves, a network devoted to preserving the natural food supply. He is co-author with Michio Kushi of The Cancer Prevention Diet, Diet for a Strong Heart, One Peaceful World, The Macrobiotic Path to Total Health, and The Gospel of Peace, and with Aveline Kushi of The Complete Guide to Macrobiotic Cooking. He helped introduce macrobiotics to China and Russia and lectures and counsels around the world.
The Director of Education at the Kushi Institute, Edward has lectured on macrobiotic philosophy and healing around the world since 1973. He studied energy healing with Michio Kushi, Lima Ohsawa, Shizuko Yamamoto and other leading teachers and is the co-author, with Michio Kushi, of Basic Shiatsu, along with over a dozen other books including Natural Healing through Macrobiotics and Holistic Health through Macrobiotics. Edward currently teaches macrobiotic healthcare and healing at the Kushi Institute and brings a wealth of knowledge and experience to the field.
Sachi Kato is a macrobiotic chef and teacher based in Los Angeles. She is a certified macrobiotic instructor for Kushi Institute Japan, and she has taken the Leadership Program at the Kushi Institutes of Europe and America. She teaches macrobiotic health care and cooking and offers private cooking, menu planning, and counseling services for gluten sensitivity, diabetes, and related conditions. She is also a photographer, and her work has been exhibited in California and Japan.
A Kushi Institute Macrobiotic Teacher, Amber has been formally studying macrobiotics for almost a decade. Amber graduated from all four levels of the Kushi Institute Macrobiotic Leadership Program in 2013. In addition to teaching; Amber has served as Kushi Institute’s Kitchen Manager and Head Chef. Other experiences and qualifications includes years of personal macrobiotic chef and catering experience. She is a 2007 graduate from The Academy of Massage & Bodywork in Bear, DE. Amber also enjoys singing, dancing, prayer, meditation, nature and hiking.
